Lori’s breakfast

loriI’m “selling” vegetables to a husband and teenagers this morning, so I am broiling asparagus with olive oil, salt, and pepper, and chopping artichoke hearts and mixing them with a little mayo and salt. I’m serving those on the side of their eggs. Yesterday I made a huge roasting pan full of eggplant, zucchini, mushrooms, tomatoes, and ground beef. It’s in the fridge for them to scoop out and warm up. Here’s a picture of my breakfast…
